How to use cash gift to minor

My husband and I plan to make cash gifts to our son, daughter-in-law and 3 minor grandchildren. Can the cash to the minors be used for home improvements that will benefit the whole family? In who's name do we make out the check to each minor? Can one lump sum check be written for the entire family or must each be done separately? Can the cash be wire transferred?
